That’s exactly what happened when we first blind cupped the latest microlot from Jairo Arcila in Quindio, Colombia. From the very first sip, we knew we had something special in the cup—something that would leave a lasting impression.
Introducing Santa Mónica – Peach & Wine Yeast Fermentation, a coffee that defies the ordinary and delivers an experience like no other.
What makes this coffee stand out is its incredible processing method. The cherries underwent a 72-hour dry anaerobic fermentation with the pulp still on. But here’s where it gets really interesting: during this fermentation, Jairo added peaches and wine yeast. Yes, actual peaches. After that, the cherries were pulped and placed on raised drying beds with peaches laid alongside them until the ideal moisture content was achieved. It’s a process that infuses the beans with a depth of flavor unlike anything we’ve encountered.
The result? A cup that bursts with vibrant notes of sweet peaches, mango, caramel, and lime. It's wild. It’s complex. It’s the kind of coffee that makes you stop and think about every sip.
