For the first time since we started roasting, our espresso won’t feature a coffee from Mexico. Instead, we're thrilled to bring you this Santa Ana from El Salvador as our new espresso offering! This is a bold shift for us, and we couldn’t be more excited to roll it out over the next few weeks. The Santa Ana brings a fresh twist with its pecan, baking cocoa, and bourbon notes, adding a cozy, nutty warmth and a touch of chocolatey richness to every shot. We believe this change will bring a unique and memorable experience to our espresso lovers.

Meet the Farmers
This coffee is sourced from various smallholder farms in the Santa Ana region, where the art of coffee growing runs deep. El Salvador, known as “the land of volcanoes,” is a small yet mighty player in the specialty coffee world, producing coffee that reflect its unique landscape. Over generations, small farmers have cultivated and perfected the varieties you'll taste in this coffee: Bourbon, Caturra, Pacas, and Pacamara.
The Process
The beans are washed-processed, a technique common in El Salvador. After being picked at peak ripeness, the coffee cherries are depulped and fermented for 12-24 hours in open air. This washing process enhances the clean, crisp characteristics of the coffee, while allowing the nutty and chocolate notes to shine. Afterward, the beans are carefully dried on patios or raised beds, a process that can take up to 20 days.

Santa Ana is one of the most productive and historical coffee regions in El Salvador, bordering Honduras and Guatemala. This area is famous for its nutrient-rich volcanic soils, which contribute to the distinctive flavor profiles in its coffee. Coffee has been a crucial part of El Salvador's economy and cultural identity, with the country's producers adapting and innovating through decades of challenges, including a civil war and the spread of coffee-leaf rust.
